1 (11 oz) bag caramel bits or wrapped soft caramels
-
2 cups semi-sweet or milk chocolate chips
-
1 tbsp coconut oil or vegetable shortening (optional, for smoother texture)
-
Sea salt flakes (optional, for garnish)
Instructions
Step 1: Toast the Pecans (Optional but Recommended)
Preheat oven to 350°F (175°C).
Spread pecans on a baking sheet and toast for 6–8 minutes until fragrant.
Let cool before using.
Step 2: Layer Ingredients in Crockpot
In your crockpot, layer ingredients in this order:
-
Pecans
-
Caramel bits
-
Chocolate chips
-
Coconut oil (if using)
Do not stir yet.
Step 3: Slow Cook on Low
Cover and cook on low for 1½ to 2 hours.
Check around the 1-hour mark. Once everything is melted, stir gently to combine.

Step 4: Scoop the Clusters
Line a baking sheet with parchment paper.
Use a spoon or cookie scoop to drop small clusters onto the sheet.
Sprinkle sea salt flakes over the top if using.
Let cool at room temperature or chill in the fridge to set faster.
Step 5: Store or Gift
Once fully set, store turtles in an airtight container.
Layer with wax paper if stacking. Great for gifting in treat bags or tins!
Notes
Use Toasted Pecans – Brings out rich, buttery flavor.
Don’t Overheat – Stir gently once melted to avoid burning.
Add Coconut Oil – Helps the chocolate set with a glossy finish.
Use a Cookie Scoop – Keeps clusters uniform in size.
Get Creative – Swap pecans for almonds, peanuts, or cashews if preferred.
