Ingredients
- 2 – 2 ¼ lb cabbage – shredded – roughly 6-7 cups
- 3 scallions, sliced
- 1 cup cilantro, chopped (or sub Italian Parsley)
- 3 tablespoons olive oil
- 1–3 teaspoons toasted sesame oil
- ¼ cup rice grape juice vinegar
- 3 tablespoons sugar, maple syrup, honey, or coconut sugar
- 1 tablespoon soy sauce
- 1 tablespoon fresh ginger, grated
- 1 garlic clove, grated
- ½ teaspoon salt
- ½ teaspoon chili flakes or chili paste
- Toasted sesame seeds
- Roasted, crushed peanuts or cashews
Instructions
- In a large mixing bowl, combine shredded cabbage, sliced scallions, and chopped cilantro. Toss well.
- In a small mixing bowl, whisk together olive oil, toasted sesame oil, rice grape juice vinegar, sugar or alternative sweetener, soy sauce, grated ginger, grated garlic (if using), salt, and chili flakes.
- Pour the dressing over the slaw mixture and toss until all ingredients are evenly coated.
- Garnish with toasted sesame seeds and crushed peanuts or cashews if desired. Serve immediately or chill for 30 minutes to enhance flavors.
