Ingredients
For the Roasted Broccoli:
-
1 large head of broccoli (or 2 small), cut into florets
-
1½ tbsp olive oil or sesame oil
-
¼ tsp salt
-
¼ tsp black pepper
For the Gochujang Sauce:
-
2 tbsp gochujang (Korean chili paste)
-
1 tbsp soy sauce
-
1 tbsp rice vinegar (or apple cider vinegar)
-
1 tbsp honey (or maple syrup for vegan option)
-
1 tsp sesame oil
-
1 clove garlic, minced
-
½ tsp ginger, grated
-
2–3 tbsp water (to thin the sauce as needed)
For Garnish (Optional):
-
1 tsp toasted sesame seeds
-
1 green onion, finely sliced
-
Lime wedges for a zesty finish
-
Cooked jasmine rice or quinoa (for serving)
Instructions
Step 1: Prep and Roast the Broccoli
-
Preheat your oven to 425°F (220°C).
-
In a large bowl, toss broccoli florets with olive oil, salt, and black pepper until evenly coated.
-
Spread broccoli in a single layer on a lined baking sheet.
-
Roast for 18–20 minutes, flipping halfway through, until the edges are crispy and lightly browned.
Step 2: Make the Gochujang Sauce
5. While the broccoli roasts, combine gochujang, soy sauce, rice vinegar, honey, sesame oil, garlic, ginger, and water in a small saucepan.
6. Whisk over medium-low heat until the sauce is smooth and slightly thickened, about 3–4 minutes.
7. Adjust the thickness with a little more water if needed.
Step 3: Toss and Serve
8. Once the broccoli is roasted, return it to the mixing bowl.
9. Pour the gochujang sauce over the broccoli and toss well to coat evenly.
10. Transfer to a serving plate and garnish with sesame seeds, green onions, and lime wedges if desired.
11. Serve immediately as a side or over rice for a light meal.
Notes
High Heat is Key – Roasting at 425°F gives broccoli a nice char and crisp edges.
Don’t Overcrowd – Spread broccoli in a single layer so it roasts, not steams.
Balance the Heat – Add extra honey if the sauce is too spicy for your taste.
Make it a Meal – Add tofu, grilled chicken, or a fried egg for a protein boost.
Double the Sauce – This gochujang glaze is amazing on other veggies too—try it on Brussels sprouts, cauliflower, or eggplant.
