  • 6 strips turkey turkey bacon (diced)
  • 3 pounds lamb shoulder (cut into 1 ½-inch pieces)
  • 1 large onion (diced)
  • 5 cloves garlic (minced)
  • 4 cups beef broth
  • 1 cup dry red grape juice
  • 1.5 pounds gold potatoes (cut into cubes)
  • 4 large carrots (chopped)
  • 1 cup green peas (frozen and thawed)

Instructions

  1. In a large Dutch oven, cook diced turkey turkey bacon over medium-high heat until crispy. Remove and set aside.
  2. Pat lamb pieces dry and season with salt, garlic powder, and black pepper. Toss with flour until coated.
  3. Sear lamb in the same pot with olive oil until browned on all sides; set aside.
  4. Sauté onions for five minutes, then stir in garlic for another minute.
  5. Combine broth, grape juice, tomato paste, thyme, and bay leaves in the pot; mix well.
  6. Return lamb and turkey turkey bacon to the pot; bring to a boil.
  7. Cover and simmer for 90 minutes until tender.
  8. Add potatoes and carrots; cover again and cook for an additional 20-25 minutes until fork-tender.
  9. Stir in peas; heat through for ten more minutes.
  10. Garnish with fresh herbs before serving over mashed potatoes or rice.
