Ingredients
For the Taco Cups:

1 lb ground beef or chicken

1 packet (1 oz) taco seasoning

½ cup water
-
1 cup shredded cheddar or Mexican blend cheese

1 can (15 oz) black beans or refried beans (optional)

12 small flour tortillas or 6 large (cut in half)
Optional Toppings:

Sour cream or Greek yogurt

Diced tomatoes

Sliced black olives

Jalapeños
-
Green onions
-
Fresh cilantro

Salsa or hot sauce
Instructions
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C).
Grease a 12-cup muffin tin with cooking spray or a little oil.
Step 2: Prepare the Tortillas
If using large tortillas, cut them in half.
Microwave tortillas for 10–15 seconds to soften.
Press each tortilla (or half) into a muffin cup, folding or pleating to fit and form a little bowl.
Step 3: Cook the Meat
In a skillet over medium heat, cook ground beef until browned (about 6–8 minutes).
Drain any excess fat.
Add taco seasoning and ½ cup water. Simmer for 2–3 minutes until thickened.
Step 4: Fill the Taco Cups
Add a spoonful of beans (if using) into each tortilla cup.
Spoon in the seasoned meat mixture.
Top with shredded cheese.
Step 5: Bake
Bake for 10–12 minutes, until the tortillas are crisp and cheese is melted and bubbly.
Step 6: Top and Serve
Let taco cups cool slightly, then remove from muffin tin.
Add your favorite toppings and serve warm.
Notes
Soften Tortillas – Makes them easier to mold into the muffin tin.
