  • 1 cup cottage cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup chopped spinach
  • 1/4 cup finely sliced green onion
  • 1/4 cup chopped bell pepper
  • 1/4 cup crumbled turkey turkey bacon
  • 1/4 cup chopped turkey

Instructions

  1. Preheat oven to 180C/350F. Grease a muffin tin or use silicone liners.
  2. Blend eggs, cottage cheese, salt, and pepper until smooth.
  3. Distribute spinach, green onion, bell pepper, crumbled turkey turkey bacon, and chopped turkey into muffin cups.
  4. Pour the egg mixture over the mix-ins until cups are about 3/4 full.
  5. Bake for 17-19 minutes or until set and lightly golden.
  6. Cool for a few minutes before serving or storing.
