  • 1 small head cabbage, shredded (about 8 cups)
  • 3 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • ¼ cup chicken broth
  • 2 tablespoons olive oil (divided)

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the ground turkey and cook until nearly cooked through (5-6 minutes).
  2. Push the turkey to one side; add onion and remaining olive oil. Sauté for 3-4 minutes.
  3. Stir in carrots, garlic, and ginger; cook for another 2 minutes. Pour in chicken broth and scrape the pan.
  4. Add cabbage, soy sauce, rice vinegar, salt, and pepper. Mix well; cover and simmer on medium-low for 12-15 minutes until cabbage is tender.
