  • 3 tablespoons olive oil
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, minced
  • ½ teaspoon red pepper flakes
  • ½ teaspoon smoked paprika
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 28 ounces canned diced tomatoes
  • 2 cups fresh baby spinach
  • 3 ounces fresh mozzarella cheese slices, broken into pieces
  • 4 large eggs
  • fresh dill (or other herbs such as cilantro, parsley, and basil) for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 3 to 4 minutes. Stir in minced garlic and cook for an additional 20 seconds until fragrant.
  2. Mix in red pepper flakes, smoked paprika, kosher salt, and black pepper; cook for 30 seconds.
  3. Add canned diced tomatoes and reduce heat to medium-low. Simmer uncovered for about 10 minutes until thickened.
  4. Stir in fresh spinach until wilted.
  5. Distribute mozzarella cheese throughout the sauce, then create four divots using the back of a spoon.
  6. Crack each egg into a small bowl and gently place one egg into each divot. Season with salt and pepper. Cover and cook for 3 to 5 minutes for soft yolks or 5 to 8 minutes for firmer eggs.
  7. Toast bread while eggs are cooking.
  8. Serve hot topped with fresh dill or your preferred herbs alongside toasted bread slices.
