Ingredients
- 1–1 ½ pounds catfish fillet
- 3½ cups water
- 1 cup milk
- 1 cup stone-ground grits
- 1–2 tablespoons Blackened or Creole Seasoning
- ½ cup red bell pepper
- 2 teaspoons minced garlic
- 1 lemon (for juice)
- 1 cup white sharp cheddar cheese
Instructions
- Preheat skillet over medium-high heat. Brush catfish fillets with oil and season with salt, pepper, and Blackened or Creole Seasoning.
- In the skillet, melt butter or add oil. Fry fish for 4–5 minutes on each side until golden brown. Remove from skillet.
- In another pan, sauté garlic in oil until fragrant. Add diced tomatoes, red bell pepper, green onion, chicken broth, lemon juice, seasoning, salt, pepper, and bay leaf; simmer for 5–10 minutes.
- In a large pot, boil water. Gradually whisk in grits while reducing heat to low. Stir in milk and salt; cook until thickened as per package instructions.
- Stir butter and cheddar into grits until melted. Serve hot by spooning grits onto plates topped with fried fish and sauce.
