2 large eggs (divided—one for dough, one for egg wash)

Instructions
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C).
Line a baking sheet with parchment paper or a silicone mat.
Step 2: Blend the Cottage Cheese
If your cottage cheese is chunky, blend it in a blender or food processor until smooth.
This step ensures a fluffier bagel texture.
Step 3: Make the Dough
In a large bowl, combine almond flour, baking powder, and salt.
Add the blended cottage cheese and 1 egg.
Mix until a thick dough forms.
Step 4: Shape the Bagels
Divide the dough into 4 equal parts.
Roll each part into a rope and form a circle to create a bagel shape.
Place onto the prepared baking sheet.
Step 5: Egg Wash & Add Toppings
Beat the second egg in a small bowl.
Brush the tops of each bagel with the egg wash.
Sprinkle with everything bagel seasoning or your choice of toppings.
Step 6: Bake
Bake for 20–25 minutes, or until the bagels are golden brown and firm to the touch.
Step 7: Cool & Serve
Allow the bagels to cool slightly before slicing and serving.
