Ingredients
-
½ cup cottage cheese (full-fat or low-fat)
-
3 large eggs, separated
-
¼ tsp cream of tartar (helps stabilize the egg whites)
-
¼ tsp salt
-
½ tsp garlic powder or onion powder (optional, for flavor)
-
1 tbsp finely chopped chives or parsley (optional for savory touch)
Optional Toppings:
-
Everything bagel seasoning
-
Sesame seeds or poppy seeds
-
Grated Parmesan cheese
Instructions
Step 1: Preheat & Prep
-
Preheat your oven to 300°F (150°C).
-
Line a baking sheet with parchment paper or a silicone baking mat.
Step 2: Blend the Cottage Cheese Mixture
3. In a bowl, combine cottage cheese, egg yolks, salt, and optional spices.
4. Use a fork or small blender to blend until smooth. Set aside.
Step 3: Beat the Egg Whites
5. In a clean bowl, beat egg whites with cream of tartar using an electric mixer until stiff peaks form (about 2–3 minutes).
6. The mixture should hold peaks when the beaters are lifted.
Step 4: Fold Gently
7. Gently fold the cottage cheese mixture into the beaten egg whites using a spatula.
8. Fold carefully to maintain as much air as possible—this keeps the bread fluffy.
Step 5: Shape & Bake
9. Scoop the mixture onto the baking sheet in 6 equal rounds (about ½ inch thick).
10. Sprinkle with optional toppings if using.
11. Bake for 25–30 minutes, or until golden and firm to the touch.
12. Let cool on a wire rack for 5–10 minutes.
Step 6: Serve & Enjoy
13. Use immediately for sandwiches or store for later. Enjoy warm or at room temperature.
Notes
Use Room Temp Eggs – Helps with volume when beating egg whites.
Don’t Overmix – Gently fold to keep the structure light and airy.
Customize Flavor – Add herbs, spices, or cheese for a savory variation.
Cool Completely – This helps the bread set and makes it easier to handle.
Store Properly – Keep in the fridge for best texture and freshness.
