For the Egg Muffins:

  • 6 large eggs

  • 1 cup cottage cheese (full-fat or low-fat)

  • ½ cup shredded cheese (cheddar, mozzarella, or your favorite blend)

  • ½ cup chopped spinach or kale

  • ¼ cup diced bell pepper

  • ¼ cup chopped green onion

  • ½ tsp garlic powder

  • ¼ tsp salt

  • ¼ tsp black pepper

  • Optional: pinch of red pepper flakes or chopped fresh herbs


Instructions

Step 1: Preheat & Prep
Preheat oven to 375°F (190°C).
Lightly grease a muffin tin or line with silicone baking cups for easy removal.

Step 2: Whisk the Eggs & Season
In a large mixing bowl, crack the eggs and whisk until smooth.
Stir in cottage cheese, garlic powder, salt, and pepper.

Step 3: Add Veggies and Cheese
Fold in chopped spinach, bell pepper, green onions, shredded cheese, and any other add-ins you like.

Step 4: Fill the Muffin Tin
Pour the egg mixture evenly into each muffin cup, filling about ¾ full.
Give the tin a gentle shake to even out the tops.

Step 5: Bake Until Set
Bake for 18–22 minutes, or until the muffins are puffed, lightly golden, and set in the center.
Let them cool in the pan for 5 minutes before transferring to a wire rack.

Step 6: Serve or Store
Serve warm, or cool completely and store for grab-and-go meals throughout the week.
