  • ¾ cup plain Greek yogurt (full-fat preferred for creaminess)

  • 1 cup almond flour

  • 2 tbsp coconut flour

  • 1 tbsp baking powder

  • ½ tsp salt

  • 1 tbsp apple cider vinegar (helps create lift)

  • ¼ tsp xanthan gum (optional, for better texture)

  • Butter or oil for greasing the pan


Instructions

Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C).
Grease your loaf pan or line it with parchment paper.

Step 2: Whisk the Wet Ingredients
In a large bowl, beat the eggs using a mixer for 1–2 minutes until frothy.
Add the Greek yogurt, apple cider vinegar, and salt, mixing until smooth.

Step 3: Add the Dry Ingredients
Sift in the almond flour, coconut flour, baking powder, and xanthan gum if using.
Mix until just combined. The batter should be thick but pourable.

Step 4: Pour and Smooth
Transfer the batter to your prepared loaf pan.
Smooth the top with a spatula to ensure an even rise.

Step 5: Bake the Bread
Bake for 30–35 minutes or until the top is golden and a toothpick comes out clean.
Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

 

Step 6: Slice and Serve
Slice with a serrated knife once fully cooled.
