Ingredients
- 2 lbs beef short ribs
- 3 large yellow onions, thinly sliced
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 6 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 bay leaf
- 1 teaspoon fresh thyme leaves
- Salt and pepper to taste
- 6 slices of baguette or crusty bread, toasted
- 1 1/2 cups shredded Gruyère or Swiss cheese
Instructions
- Heat olive oil in a Dutch oven over medium-high heat. Season beef short ribs with salt and pepper; sear on all sides until browned (about 3-4 minutes per side). Remove and set aside.
- In the same pot, lower heat to medium and add butter. Add sliced onions; cook while stirring occasionally for about 25-30 minutes until caramelized. Stir in minced garlic and cook for an additional minute.
- Return short ribs to the pot along with beef broth, Worcestershire sauce, bay leaf, and thyme. Simmer on low for 2-3 hours until beef is tender. Shred meat from bones and return it to the pot.
- Preheat broiler. Ladle soup into oven-safe bowls; top with toasted bread and shredded cheese. Broil for 2-3 minutes until cheese is melted and bubbly.
- Serve hot, garnished with fresh thyme if desired.
