- 1 ½ lbs chuck steak, cubed
- 2–3 tbsp olive oil
- 2 tbsp unsalted butter
- 5 large onions
- 4 garlic cloves, minced
- 2½ cups beef broth
- ½ cup dry grape juice, divided
- 1 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
- 1 tbsp tomato paste (optional)
- 1 tbsp flour
- 2 bay leaves
- 1 ½ cups Gruyere cheese, coarsely grated
- 3 tbsp Parmesan cheese, freshly grated
- 1 white baguette, sliced
- olive oil as needed, to brush on the bread
- large pinch salt
- 1 tsp black pepper
- 1 tsp brown sugar
- 1 tbsp fresh thyme
- ½ tbsp fresh thyme, to garnish
Instructions
- Prepare your ingredients by chopping onions and mincing garlic.
- Brown the beef in olive oil over medium-high heat until golden on all sides. Remove from pot.
- In the same pot, melt butter and caramelize onions with salt until golden brown.
- Add garlic and cook briefly before deglazing with grape juice.
- Return the beef to the pot and add Worcestershire sauce, Dijon mustard, tomato paste (optional), flour, beef broth, bay leaves, and remaining grape juice.
- Simmer uncovered for about 90 minutes until beef is tender.
- While simmering, toast baguette slices in the oven.
- Serve stew in bowls topped with Dijon mustard spread on toasted bread and generously sprinkle with Gruyere and Parmesan cheese before broiling until bubbly.
