  • 2 tablespoons neutral oil
  • 3 lbs beef chuck roast
  • 4 yellow onions
  • 4 garlic cloves
  • 1 cup dry white grape juice
  • 6 cups beef stock
  • 1 demi baguette
  • 4 oz gruyere cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cut beef into cubes, season with salt and pepper. Set aside.
  3. Slice onions thinly; tie thyme sprigs together.
  4. Heat oil in a Dutch oven, sear beef until browned on all sides. Remove and set aside.
  5. In the same pot, caramelize onions with butter over medium-low heat until golden.
  6. Add garlic, mustard, Worcestershire sauce, and flour; stir well.
  7. Pour in grape juice and simmer before adding beef stock, bay leaves, and thyme.
  8. Return beef to the pot and cover; braise in the oven for three hours until tender.
