  • 1 whole chicken
  • 2 large onions (thinly sliced)
  • 6 sprigs fresh thyme or 1 ½ tsp dried thyme
  • 3 ½ tsp kosher salt
  • ½ tsp black pepper
  • 1 packet French onion soup mix
  • 3 cups chicken stock
  • 3 garlic cloves (minced)
  • 1 tbsp olive oil

Instructions

  1. Gather all ingredients. Thinly slice the onions and mince the garlic.
  2. In a skillet over medium heat, add olive oil. Once hot, sauté the onions until soft and caramelized (about 10–15 minutes).
  3. Rub the whole chicken with salt, pepper, Worcestershire sauce, and garlic. Place in a slow cooker or baking dish.
  4. Top with caramelized onions, thyme, soup mix, and chicken stock.
  5. For slow cooking: Cover and cook on low for approximately 8 hours until tender. For oven cooking: Preheat to 300°F (150°C), cover with foil, and bake for about 4 hours.
  6. After cooking, remove the chicken and stir in a cornstarch slurry into the remaining liquid to thicken over medium heat until bubbly.
  7. Shred the chicken using two forks and return it to the gravy. Serve hot over your choice of sides.
