  • 6 cups sourdough bread, cubed
  • 1/4 cup olive oil
  • 1 teaspoon granulated garlic

  • 1/4 cup butter
  • 1/4 cup flour
  • 4 cups whole milk
  • 2 cups gruyere cheese, grated
  • 3 yellow onions, sliced
  • 3 tablespoons unsalted butter
  • 2 teaspoons fresh thyme
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon balsamic vinegar
  • 1 quart good beef stock

Instructions

  1. Preheat your oven to 375°F.
  2. Prepare croutons by tossing cubed sourdough with olive oil and granulated garlic; bake until golden (16-20 minutes).
  3. Cook lasagna noodles according to package instructions; set aside.
  4. In a frying pan, caramelize onions in butter until golden; stir in flour and gradually add beef stock and seasonings until thickened.
  5. For the béchamel sauce, create a roux with butter and flour, then whisk in whole milk and melt gruyere cheese.
  6. Layer onion filling, noodles, croutons, and béchamel sauce in a baking dish, repeating layers twice more.
  7. Top with remaining gruyere cheese and bake for 35-40 minutes until golden brown.
  8. Let cool for 10 minutes before slicing and serving.
