  • White grape juice (¾ cup)
  • All-purpose flour (1 tablespoon)
  • Beef broth (3 cups)
  • Worcestershire sauce (2 tablespoons)
  • Bay leaves (3)
  • Fresh rosemary (2 sprigs)
  • Fresh thyme (4 sprigs)
  • Gruyere cheese (1 cup, shredded)

Instructions

  1. Preheat the oven to 300°F.
  2. Pat the chuck roast dry; season generously with salt and pepper.
  3. In a Dutch oven, heat olive oil over medium-high heat. Sear the roast on both sides until browned; remove from pot.
  4. Melt butter in the same pot; add onions and cook until caramelized (25–30 minutes). Add garlic; cook for an additional 2 minutes.
  5. Deglaze with white grape juice; let reduce by half before stirring in flour.
  6. Add beef broth, Worcestershire sauce, bay leaves, rosemary, and thyme; bring to a simmer.
  7. Return the roast to the pot; ensure it’s mostly submerged in liquid.
  8. Cover tightly and braise in the oven for about 3½ hours until tender.
  9. Remove from oven; shred beef while discarding excess fat and herbs.
  10. Top with Gruyere cheese; return to oven until melted (5–7 minutes).
  11. Serve warm over mashed potatoes or with toasted baguette slices.
