  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • ½ cup dry white grape juice
  • 6 cups low sodium beef broth
  • Salt and black pepper to taste
  • Fresh thyme and bay leaves
  • 8 slices baguette
  • 2 ounces Gruyere cheese, shredded

Instructions

  1. Slice onions into ¼-inch thick pieces.
  2. In a Dutch oven, heat butter and olive oil over medium heat. Add sliced onions and sauté until caramelized (25-30 minutes).
  3. Stir in minced garlic and flour for one minute.
  4. Deglaze with grape juice; scrape the bottom of the pot.
  5. Add broth, salt, pepper, thyme, and bay leaves; simmer uncovered for 30 minutes.
  6. Preheat oven to 400°F; toast baguette slices for 5-6 minutes.
  7. Taste soup and adjust seasoning; remove thyme stems and bay leaves before serving.
  8. Broil bowls of soup topped with baguette slices and cheese at 425°F until melted (2-4 minutes).
