- 4 Chicken Thighs
- 2 cups self-rising flour
- 1 cup buttermilk
- 4 slices brioche bread
- 4 large eggs
- 1 cup apricot
- 1 tbsp chili sauce
- 1/4 cup honey
- 1 tbsp onion powder
- 1 tbsp garlic
- 1 tbsp paprika
- 1/2 tbsp Tony’s seasoning
- 1/2 tsp white pepper
- 1/2 tsp salt
- 3 tbsp unsalted butter (for frying)
- 1/2 cup milk
- 1 tsp almond extract (or vanilla)
- 1 tsp cinnamon
- pinch nutmeg
- pinch salt
- Dash sriracha
Instructions
- Clean chicken thighs and marinate them in buttermilk, salt, and white pepper for at least 30 minutes.
- Heat vegetable oil in a Dutch oven to 350°F.
- Mix self-rising flour with onion powder, garlic, paprika, and seasoning.
- Coat chicken in the flour mixture and fry until golden brown (about 7 minutes per side). Place on a cooling rack.
- For the sauce, simmer apricot, chili sauce, honey, and sriracha until combined.
- Whisk eggs, milk, almond extract (or vanilla), cinnamon, nutmeg, and salt in a bowl.
- Dip brioche into the egg mixture and cook in butter until golden brown.
