  • 2 large eggs (room temperature)
  • 1 tsp pure vanilla extract
  • 1 oz freeze-dried strawberries
  • 1 cup lightly pureed strawberries
  • 3/4 cup buttermilk (room temperature)
  • 1 cup unsalted butter (room temperature)
  • 8 oz cream cheese (room temperature)
  • 3 cups powdered sugar
  • 1/4 cup ground freeze-dried strawberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together all-purpose flour, cake flour, baking powder, baking soda, and salt.
  3. In another bowl, cream together the butter, canola oil, and sugar until light and fluffy.
  4. Add eggs and vanilla, mixing well before gently folding in pureed and freeze-dried strawberries.
  5. Gradually mix in the dry ingredients alternately with buttermilk until just combined.
  6. Fill each cupcake liner two-thirds full with batter and bake for about 16 minutes or until a toothpick comes out clean.
  7. For frosting, beat together butter and cream cheese before gradually adding powdered sugar and ground strawberries until smooth.
  8. Once cooled, frost the cupcakes generously and top with small pieces of fresh strawberries lightly sprinkled with sugar.
