- 8 oz cream cheese (room temperature)
- 3 cups powdered sugar
- 1/4 cup ground freeze-dried strawberries
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
- In a bowl, whisk together all-purpose flour, cake flour, baking powder, baking soda, and salt.
- In another bowl, cream together the butter, canola oil, and sugar until light and fluffy.
- Add eggs and vanilla, mixing well before gently folding in pureed and freeze-dried strawberries.
- Gradually mix in the dry ingredients alternately with buttermilk until just combined.
- Fill each cupcake liner two-thirds full with batter and bake for about 16 minutes or until a toothpick comes out clean.
- For frosting, beat together butter and cream cheese before gradually adding powdered sugar and ground strawberries until smooth.
- Once cooled, frost the cupcakes generously and top with small pieces of fresh strawberries lightly sprinkled with sugar.
