  • 2 lbs lamb rib chops (8 count)
  • 5 garlic cloves (pressed)
  • 4 Tbsp olive oil (divided)
  • 2 Tbsp fresh parsley (plus extra for garnish)
  • 2 tsp hot pepper sauce
  • 1 tsp fine sea salt
  • 1 tsp black pepper
  • 1/4 tsp dried thyme
  • 1/2 cup chicken stock
  • 2 Tbsp softened butter

Instructions

  1. Prepare all ingredients: press garlic and chop herbs.
  2. Mix garlic, 3 Tbsp olive oil, parsley, hot sauce, salt, pepper, and thyme. Rub onto lamb chops.
  3. Heat remaining olive oil in a cast iron skillet over medium-high heat.
  4. Sear lamb chops for about 4 minutes on each side until golden brown.
  5. Remove chops and make pan sauce by adding chicken stock to the skillet; stir in butter until melted.
  6. Serve lamb chops drizzled with pan sauce and garnish as desired.
