Ingredients

Scale

For the Garlic Butter Sauce:

  • 4 tbsp unsalted butter, melted

  • 4 cloves garlic, minced

  • 1 tbsp lemon juice

  • ½ tsp lemon zest

  • ½ tsp paprika

  • ¼ tsp red pepper flakes (optional for heat)

  • Salt and black pepper to taste

For the Foil Packs:

  • 1 lb large shrimp (peeled and deveined)

  • 1 bunch asparagus (trimmed and cut into 2-inch pieces)

  • 2 tbsp olive oil

  • 1 tsp Italian seasoning

  • Salt and pepper to taste

  • Lemon slices (for topping)

  • 2 tbsp chopped fresh parsley (for garnish)

Instructions

Step 1: Preheat Your Oven or Grill
Preheat the oven to 400°F (200°C), or preheat your grill to medium-high heat.

Step 2: Make the Garlic Butter Sauce
In a small bowl, whisk together melted butter, garlic, lemon juice, lemon zest, paprika, red pepper flakes, salt, and black pepper.
Set aside.

Step 3: Season the Shrimp and Asparagus
In a large bowl, combine shrimp and asparagus.
Drizzle with olive oil and season with Italian seasoning, salt, and pepper.
Toss gently to coat everything evenly.

Step 4: Assemble the Foil Packs
Tear 4 large pieces of foil (about 12 x 16 inches).
Divide the shrimp and asparagus evenly among the foil sheets, placing them in the center.
Spoon garlic butter sauce evenly over each portion.
Top with a lemon slice.
Fold the sides of the foil over the food and seal tightly to form a packet.

Step 5: Cook the Foil Packs
For Oven:
Place foil packs on a baking sheet and bake for 15–18 minutes, or until shrimp are pink and opaque.
For Grill:
Place foil packs on the grill and cook for 10–12 minutes, flipping once halfway through.

Step 6: Serve and Enjoy
Carefully open the foil packs (watch out for hot steam).
Garnish with fresh chopped parsley.
Serve directly in the foil or plate with rice, pasta, or crusty bread.

Notes

  • Use Heavy-Duty Foil – Prevents tearing and leakage during cooking.
  • Don’t Overcook the Shrimp – They cook quickly; as soon as they’re pink and curled, they’re done.
  • Trim the Asparagus Evenly – This ensures even cooking across all pieces.
  • Double Up the Foil – For added security, especially if grilling over open flames.
  • Add a Starch – Toss in par-cooked baby potatoes or corn for a heartier meal.
