Instructions
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, and spices.
- In a stand mixer, cream butter and brown sugar until fluffy. Add molasses, egg yolk, and vanilla; mix until combined.
- Gradually add dry ingredients to wet mixture until just combined.
- Shape dough into a disk, wrap in plastic wrap, and refrigerate for 2 hours or up to 2 days.
- Preheat oven to 350°F. Roll out chilled dough to ¼-inch thickness and cut shapes with cookie cutters.
- Bake cookies on parchment-lined sheets for 7–9 minutes (5–7 minutes for mini cookies). Cool on wire racks.
- For icing: mix powdered sugar with vanilla and water until desired consistency is reached; decorate cooled cookies.
