  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low sodium chicken broth
  • 1 tbsp Italian seasoning
  • 1/4 tsp sea salt
  • 1/4 tsp ground black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 2 cups spinach (optional)
  • 1 box (10 oz) gluten free lasagna noodles (broken in half)

Instructions

  1. In a large stock pot, heat olive oil over medium heat. Sauté chopped onion and minced garlic until fragrant.
  2. Add ground beef and ground Italian chicken; cook until browned, draining excess fat.
  3. Stir in marinara sauce, diced tomatoes with liquid, chicken broth, Italian seasoning, red pepper flakes (if using), sea salt, and black pepper. Bring to a boil.
  4. Add broken gluten free lasagna noodles; simmer for about 15 minutes until noodles are tender.
  5. Stir in fresh spinach until wilted. Adjust spices as needed before serving.
