  • 1 lb gnocchi (gluten-free if needed)
  • 7 oz vegan sour cream
  • 7 oz vegan cream cheese
  • 6 oz plant-based chicken cubes
  • 3 cups vegetable broth
  • 2 Tbsp olive oil
  • 3 cloves garlic, diced
  • 1/3 cup onions, finely chopped
  • 2 ribs celery, chopped
  • 1/4 cup carrots, shredded
  • 1 handful spinach
  • 1 tsp Italian herbs
  • salt, pepper to taste

Instructions

  1. In a saucepan over medium heat, warm olive oil. Sauté diced celery, garlic, and onions for about 2 minutes until fragrant. Add plant-based chicken cubes and season with salt and pepper; cook for an additional 3 minutes.
  2. Pour in vegetable broth and bring to a boil. Once boiling, add gnocchi and cook for 2–3 minutes until they float to the top.
  3. Stir in vegan cream cheese, sour cream, shredded carrots, Italian herbs, and spinach. Cook for another 2 minutes until heated through.
  4. Serve immediately in bowls.
