- 7 oz vegan sour cream
- 7 oz vegan cream cheese
- 6 oz plant-based chicken cubes
- 3 cups vegetable broth
- 2 Tbsp olive oil
- 3 cloves garlic, diced
- 1/3 cup onions, finely chopped
- 2 ribs celery, chopped
- 1/4 cup carrots, shredded
- 1 handful spinach
- 1 tsp Italian herbs
- salt, pepper to taste
Instructions
- In a saucepan over medium heat, warm olive oil. Sauté diced celery, garlic, and onions for about 2 minutes until fragrant. Add plant-based chicken cubes and season with salt and pepper; cook for an additional 3 minutes.
- Pour in vegetable broth and bring to a boil. Once boiling, add gnocchi and cook for 2–3 minutes until they float to the top.
- Stir in vegan cream cheese, sour cream, shredded carrots, Italian herbs, and spinach. Cook for another 2 minutes until heated through.
- Serve immediately in bowls.
