Ingredients
• 3 large zucchini, cut lengthwise into ½-inch thick “steaks”
• 2 tbsp olive oil
• 2 tbsp butter
• 3 cloves garlic, minced
• ½ tsp dried oregano
• ½ tsp dried thyme or Italian seasoning
• Salt and black pepper to taste
• ¾ cup shredded mozzarella or provolone cheese
• ¼ cup grated parmesan cheese
• Optional garnish: chopped fresh parsley or basil
Instructions
Step 1: Prep the Zucchini Steaks
Wash zucchini and slice lengthwise into ½-inch thick steaks.
Pat dry with a paper towel to remove moisture for better browning.
Step 2: Cook the Zucchini
Skillet Method:
Heat olive oil in a large skillet over medium heat.
Add zucchini steaks in a single layer (cook in batches if needed).
Cook for 3–4 minutes per side until golden and slightly tender.
Transfer to a baking sheet.
Oven Method:
Preheat oven to 425°F (220°C).
Brush zucchini steaks with olive oil and season with salt and pepper.
Roast for 15–18 minutes until golden and slightly tender.
Step 3: Make the Garlic Herb Butter
While zucchini cooks, melt butter in a small pan over low heat.
Add garlic, oregano, and thyme. Cook for 1–2 minutes until fragrant but not browned.
Step 4: Assemble & Bake
Place cooked zucchini steaks on a lined baking sheet.
Brush with garlic herb butter.
Sprinkle with mozzarella and parmesan cheese.
Broil on high for 2–3 minutes, just until cheese is melted and bubbly.
Step 5: Garnish & Serve
Remove from oven and garnish with fresh parsley or basil if desired.
Serve hot as a side or main dish with crusty bread, rice, or pasta.
