  • 3 cups chicken stock
  • 8 oz cherry tomatoes (halved)

  • 6 oz feta cheese (crumbled)
  • Fresh basil (chopped)

Instructions

  1. Sauté shrimp in olive oil with smoked paprika, chili powder, Italian seasoning, red pepper flakes, and salt until pink—about 3–4 minutes. Remove and set aside.
  2. In the same skillet, toast orzo for 1 minute, then add chicken stock, cherry tomatoes, sun-dried tomatoes, kalamata olives, and green olives; stir well.
  3. Bring to a boil; reduce heat and simmer covered for 10–12 minutes until liquid is absorbed and orzo is tender.
  4. Return shrimp to the skillet; mix in feta cheese, lemon juice, extra virgin olive oil, smoked paprika, Italian seasoning, chopped basil, salt, and pepper until combined.
