Instructions
Step 1: Marinate the Chicken
Rub the chicken breasts with olive oil, paprika, garlic powder, salt, and black pepper.
Let sit for at least 10 minutes while you prepare the salad.
Step 2: Grill the Chicken
Preheat the grill or grill pan over medium-high heat.
Grill chicken for 5–7 minutes per side, or until fully cooked and nicely charred.
Let the chicken rest for 5 minutes, then slice.
Step 3: Make the Dressing
In a small bowl or jar, whisk together olive oil, lemon juice, Dijon mustard, garlic, salt, and pepper until emulsified.
Step 4: Assemble the Salad
In a large bowl, toss the mixed greens with half of the dressing.
Top with sliced grilled chicken, avocado, cherry tomatoes, red onion, cucumber, and feta cheese if using.
Step 5: Serve
Drizzle with the remaining dressing just before serving.
Garnish with fresh herbs if desired.
Notes
Let the Chicken Rest – This locks in juices for perfectly moist chicken.
Use Ripe Avocados – Look for avocados that yield slightly to gentle pressure.
Grill Marks – Grill at medium-high heat for the best sear without drying out the chicken.
Toss Greens Lightly – Dress just before serving to keep the salad crisp.
Customize Your Bowl – Add roasted veggies, grains, or seeds for variety.
