Ingredients
For the Chicken Marinade:
-
1½ lbs boneless, skinless chicken breasts or thighs, cut into chunks
-
3 tbsp olive oil
-
1 tbsp lemon juice
-
2 tbsp ranch seasoning mix (store-bought or homemade)
-
1 tsp garlic powder
-
½ tsp onion powder
-
½ tsp black pepper
-
¼ tsp paprika
For the Garlic Parmesan Butter:
-
3 tbsp unsalted butter, melted
-
2 cloves garlic, minced
-
¼ cup grated parmesan cheese
-
1 tbsp chopped fresh parsley (optional)
-
Extra ranch seasoning (optional for sprinkling)
Extras:
-
Wooden or metal skewers (if wooden, soak in water for 30 minutes before using)
-
Lemon wedges for serving
Instructions
Step 1: Marinate the Chicken
-
In a large bowl, combine olive oil, lemon juice, ranch seasoning, garlic powder, onion powder, paprika, and pepper.
-
Add chicken chunks and toss to coat evenly.
-
Cover and refrigerate for at least 30 minutes (up to 4 hours for deeper flavor).
Step 2: Preheat the Grill
-
Heat grill or grill pan to medium-high.
-
Lightly oil the grates or spray with cooking spray to prevent sticking.
Step 3: Skewer the Chicken
-
Thread marinated chicken pieces onto skewers, spacing slightly for even cooking.
-
Discard any leftover marinade.
Step 4: Grill the Skewers
-
Place skewers on the grill and cook for 10–12 minutes, turning every 2–3 minutes, until chicken is golden with nice grill marks and fully cooked (internal temp 75°C / 165°F).
-
While grilling, mix the melted butter with minced garlic and set aside.
Step 5: Add Garlic Parmesan Finish
-
In the last 2–3 minutes of grilling, brush skewers with garlic butter and sprinkle with parmesan.
-
Let it melt slightly on the hot skewers, then remove from the grill.
Step 6: Garnish and Serve
-
Sprinkle with fresh parsley and a little more parmesan if desired.
-
Serve hot with lemon wedges for extra zing.
Notes
Don’t Over-Marinate – 30 minutes is great; longer than 4 hours can break down the meat.
Soak Wooden Skewers – Prevents burning on the grill.
Cut Chicken Evenly – Ensures even cooking.
Use a Thermometer – Check for doneness without overcooking.
Customize Heat – Add chili flakes to the butter if you want it spicy.
