Ingredients
- 1 pound ground beef (85/15 or 90/10 lean)
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 medium potatoes, diced (Yukon Gold or Russet)
- 1 teaspoon salt (or to taste)
- ½ teaspoon black pepper
- 1 teaspoon smoked paprika
- ½ teaspoon dried oregano
- ½ teaspoon chili powder (optional for a little heat)
- ½ cup beef broth or water
- ½ cup shredded cheese (cheddar, Monterey Jack, or preferred type, optional)
- 2 green onions, chopped (for garnish)
Instructions
Heat a large skillet over medium heat. Add olive oil and diced onion, cooking for 2–3 minutes until softened.
Add the ground beef and break it apart with a spatula. Cook for about 5 minutes until browned. Drain excess grease if needed.
Stir in minced garlic and cook for 30 seconds. Add the diced potatoes, salt, pepper, paprika, oregano, and chili powder.
Pour in the beef broth or water, cover, and let simmer for 10–12 minutes, stirring occasionally. Cook until potatoes are tender.
If using cheese, sprinkle it over the mixture and let it melt. Garnish with chopped green onions and serve warm.
Notes
- Use waxy potatoes like Yukon Gold for a firmer texture, or Russet for a softer consistency.
- Want more vegetables? Try adding bell peppers, mushrooms, or spinach.
- Make it spicy by adding red pepper flakes or a dash of hot sauce.
- For a crispy texture, remove the lid in the last few minutes and let the potatoes brown.
