  • 1 pound ground beef (85/15 or 90/10 lean)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 medium potatoes, diced (Yukon Gold or Russet)
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon chili powder (optional for a little heat)
  • ½ cup beef broth or water
  • ½ cup shredded cheese (cheddar, Monterey Jack, or preferred type, optional)
  • 2 green onions, chopped (for garnish)

Instructions

Step 1: Cook the Beef

Heat a large skillet over medium heat. Add olive oil and diced onion, cooking for 2–3 minutes until softened.

Add the ground beef and break it apart with a spatula. Cook for about 5 minutes until browned. Drain excess grease if needed.

Step 2: Add Garlic and Potatoes

Stir in minced garlic and cook for 30 seconds. Add the diced potatoes, salt, pepper, paprika, oregano, and chili powder.

Step 3: Simmer Until Tender

Pour in the beef broth or water, cover, and let simmer for 10–12 minutes, stirring occasionally. Cook until potatoes are tender.

Step 4: Add Cheese and Serve

If using cheese, sprinkle it over the mixture and let it melt. Garnish with chopped green onions and serve warm.

Notes

  • Use waxy potatoes like Yukon Gold for a firmer texture, or Russet for a softer consistency.
  • Want more vegetables? Try adding bell peppers, mushrooms, or spinach.
  • Make it spicy by adding red pepper flakes or a dash of hot sauce.
  • For a crispy texture, remove the lid in the last few minutes and let the potatoes brown.
