- 2/3 cup long-grain white rice (uncooked)
- 1 pound ground beef (80-90%)
- 1 yellow onion (diced)
- 3 jalapeños (diced and de-seeded)
- 3–4 cups red enchilada sauce (store-bought or homemade)
- 1 can (16 oz) refried beans
- 2 cups shredded cheese (cheddar or Mexican blend)
- 6 large tortillas
Instructions
- Preheat your oven to 375°F (190°C).
- Rinse the rice under cold water until clear, then cook with 1 1/3 cups of water in a small pot over medium-high heat until absorbed, about 15 minutes.
- In a large skillet, cook ground beef with diced onion and jalapeños over medium heat until browned (7–10 minutes). Drain excess fat and season with salt and pepper. Stir in ½ cup of enchilada sauce.
- Spread ¼ cup of enchilada sauce on the bottom of a baking dish. Fill each tortilla with refried beans, cheese, rice, and beef mixture; roll tightly and place seam side down in the dish.
