- 1 pound ground turkey (94%)
- 1 bell pepper (diced)
- 1/2 yellow onion (diced)
- 1/2 cup canned black beans
- 1/2 cup canned corn
- 2 ½ cups Oaxaca or Monterey Jack Cheese
- 10 medium-sized flour tortillas
- Taco seasoning mix
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Add ground turkey, diced bell pepper, and onion; cook until the turkey is browned and the onions are translucent.
- Stir in black beans, corn, taco seasoning, and tomato paste with a splash of water; cook for another 2 minutes until heated through.
- On a clean surface, brush one side of a tortilla with oil. Flip it over, sprinkle cheese on half, add the turkey mixture, and top with more cheese. Fold the tortilla over.
- In another skillet, cook the folded quesadilla until golden brown on each side and the cheese is melted. Remove from heat and cut into wedges.
