  • 4 tablespoons olive oil
  • 1 pound ground turkey (94%)
  • 1 bell pepper (diced)
  • 1/2 yellow onion (diced)
  • 1/2 cup canned black beans
  • 1/2 cup canned corn
  • 2 ½ cups Oaxaca or Monterey Jack Cheese
  • 10 medium-sized flour tortillas
  • Taco seasoning mix

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  2. Add ground turkey, diced bell pepper, and onion; cook until the turkey is browned and the onions are translucent.
  3. Stir in black beans, corn, taco seasoning, and tomato paste with a splash of water; cook for another 2 minutes until heated through.
  4. On a clean surface, brush one side of a tortilla with oil. Flip it over, sprinkle cheese on half, add the turkey mixture, and top with more cheese. Fold the tortilla over.
  5. In another skillet, cook the folded quesadilla until golden brown on each side and the cheese is melted. Remove from heat and cut into wedges.
  6. Repeat with remaining ingredients.
