  • 1 pound ground lamb, beef, or chicken
  • ¼ cup minced onion
  • 3 cloves garlic (minced)
  • 1 large egg
  • ½ cup finely crumbled feta cheese
  • 1 teaspoon Greek seasoning
  • ½ teaspoon salt
  • 12 cloves garlic (minced or pressed)
  • ¼ teaspoon salt (to taste)
  • half of one European cucumber (peeled, grated, drained)
  • 1 cup plain yogurt (drained)
  • 1 tablespoon chopped fresh mint (plus more to taste)
  • 1 tablespoon chopped fresh dill
  • freshly ground black pepper (to taste)
  • 1 tablespoon olive oil
  • 2 cups cooked rice (white or brown)
  • juice of one half lemon (roughly 1 tablespoon)
  • ¼ teaspoon salt (to taste)
  • 1 cup tomatoes (diced, halved, or chopped)
  • 1 cup diced cucumber (drained)
  • 1 tablespoon olive oil
  • ½ teaspoon salt (to taste)

Instructions

  1. Preheat the oven to 400°F (200°C). In a mixing bowl, combine ground meat with minced onion, garlic, egg, crumbled feta, Greek seasoning, and salt. Mix until just combined and form into 1-inch meatballs.
  2. Place the meatballs on a baking sheet lined with parchment paper and bake for about 20 minutes or until cooked through.
  3. For the tzatziki sauce, mix garlic, salt, grated cucumber, yogurt, chopped mint, dill, and black pepper in a separate bowl. Refrigerate until ready to serve.
  4. In a pot over medium heat, warm olive oil before stirring in cooked rice with lemon juice and salt until heated through.
  5. Combine diced tomatoes and cucumbers in a bowl; drizzle with olive oil and sprinkle with salt before tossing gently.
  6. Assemble each bowl starting with lemon rice at the base followed by meatballs and tzatziki sauce. Add cucumber salad on the side and garnish as desired.
