- ¼ cup minced onion
- 3 cloves garlic (minced)
- 1 large egg
- ½ cup finely crumbled feta cheese
- 1 teaspoon Greek seasoning

- half of one European cucumber (peeled, grated, drained)
- 1 cup plain yogurt (drained)
- 1 tablespoon chopped fresh mint (plus more to taste)
- 1 tablespoon chopped fresh dill
- freshly ground black pepper (to taste)
- 1 tablespoon olive oil
- 2 cups cooked rice (white or brown)
- juice of one half lemon (roughly 1 tablespoon)
- ¼ teaspoon salt (to taste)
- 1 cup tomatoes (diced, halved, or chopped)
- 1 cup diced cucumber (drained)
- 1 tablespoon olive oil
- ½ teaspoon salt (to taste)

Instructions
- Preheat the oven to 400°F (200°C). In a mixing bowl, combine ground meat with minced onion, garlic, egg, crumbled feta, Greek seasoning, and salt. Mix until just combined and form into 1-inch meatballs.
- Place the meatballs on a baking sheet lined with parchment paper and bake for about 20 minutes or until cooked through.
- For the tzatziki sauce, mix garlic, salt, grated cucumber, yogurt, chopped mint, dill, and black pepper in a separate bowl. Refrigerate until ready to serve.
- In a pot over medium heat, warm olive oil before stirring in cooked rice with lemon juice and salt until heated through.
- Combine diced tomatoes and cucumbers in a bowl; drizzle with olive oil and sprinkle with salt before tossing gently.
- Assemble each bowl starting with lemon rice at the base followed by meatballs and tzatziki sauce. Add cucumber salad on the side and garnish as desired.
