For the Casserole:

  • 3 cups cooked, shredded chicken (rotisserie or homemade)

  • 1 (32 oz) bag frozen hashbrowns (thawed)

  • 1 can (10.5 oz) cream of chicken soup

  • 1 cup sour cream or plain Greek yogurt

  • 2 cups shredded cheddar cheese (divided)

  • ½ cup milk

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp salt

  • ¼ tsp black pepper

For the Topping (optional):

  • ½ cup crushed butter crackers or cornflakes

  • 2 tbsp melted butter

  • 1 tbsp chopped fresh parsley (for garnish)


Instructions

Step 1: Preheat & Prep

  1. Preheat oven to 375°F (190°C).

  2. Grease a 9×13-inch baking dish with butter or nonstick spray.

Step 2: Make the Filling
3. In a large bowl, combine cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper.
4. Stir in shredded chicken, thawed hashbrowns, and 1½ cups of the cheese.
5. Mix until everything is fully coated and well combined.

Step 3: Assemble the Casserole
6. Pour the mixture into the prepared baking dish and spread evenly.
7. Top with remaining ½ cup shredded cheese.

Step 4: Add the Crunch (Optional)
8. In a small bowl, mix crushed crackers or cornflakes with melted butter.
9. Sprinkle evenly over the casserole for a crunchy topping.

Step 5: Bake Until Golden
10. Bake uncovered for 40–45 minutes, until the top is golden and bubbly.
11. If browning too quickly, tent loosely with foil in the last 10 minutes.

Step 6: Garnish & Serve
12. Let cool for 5–10 minutes before serving.
13. Garnish with chopped parsley and enjoy!

Use Thawed Hashbrowns – Frozen ones can water down the dish.
