For the Bread:

  • 1 large crusty loaf of bread (sourdough or Italian works best)

  • 4 tbsp unsalted butter, melted

  • 2 cloves garlic, minced

  • 1 tsp Italian seasoning

  • ½ tsp salt

  • ¼ tsp black pepper

For the Cheese Filling:

  • 1 ½ cups shredded mozzarella cheese

  • 1 cup shredded sharp cheddar cheese

  • ¼ cup grated parmesan cheese

  • 2 tbsp chopped fresh parsley

  • 2 green onions, finely chopped (optional for extra flavor)

For Garnish:

  • 1 tbsp olive oil (for brushing the top)

  • Extra parsley or chives for topping


Instructions

Step 1: Prep the Bread

  1. Preheat your oven to 375°F (190°C).

  2. Place the loaf of bread on a cutting board.

  3. Using a serrated knife, slice the bread about ¾ of the way through, making cuts every 1 inch across the width—be careful not to slice all the way through.

  4. Turn the loaf and make perpendicular cuts, creating a crosshatch pattern without cutting completely through. The loaf should stay intact but form square pockets.

Step 2: Make the Garlic Butter
5. In a small bowl, combine melted butter, minced garlic, Italian seasoning, salt, and black pepper.
6. Mix well to infuse the butter with the herbs and garlic.

Step 3: Stuff the Bread
7. Carefully open the slits and drizzle the garlic butter into all the cracks, using a brush or spoon to help distribute it evenly.
8. Stuff each pocket with a generous amount of the cheese mixture—mozzarella, cheddar, and parmesan.
9. Sprinkle chopped parsley and green onions throughout for fresh flavor.

Step 4: Bake the Cheesy Bread
10. Place the stuffed loaf on a parchment-lined baking sheet.
11. Lightly brush the top with olive oil.
12. Cover loosely with foil and bake for 15 minutes.
13. Remove the foil and bake an additional 10–12 minutes, until the cheese is fully melted and the bread is golden and crispy.

 

Step 5: Garnish & Serve
14. Remove from the oven and let it cool slightly for 2-3 minutes.
15. Sprinkle with extra chopped parsley or chives.
16. Serve warm and enjoy pulling apart each cheesy, garlicky piece.

Notes

Use Day-Old Bread – Slightly stale bread holds its shape better when slicing.
Don’t Cut All the Way – Keep the base intact to hold everything together.
Pack the Cheese – Be generous with your filling for a gooey experience.
Reheat Easily – Warm up leftovers in the oven at 350°F for 5–7 minutes.
