  • 3/4 cup mashed ripe banana
  • 1 1/4 cups rolled oats
  • 1/4 cup flaxmeal
  • 1/4 cup unsalted peanut butter
  • 1/4 cup coconut sugar
  • Optional: 1 teaspoon vanilla extract
  • Optional: 2 teaspoons cinnamon
  • Optional: 1/3 cup chopped nuts
  • Optional: 1/4 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (180°C) and line a cookie sheet with parchment paper.
  2. In a mixing bowl, mash the bananas until smooth and measure out 3/4 cup.
  3. Combine the mashed banana with peanut butter, rolled oats, flaxmeal, vanilla extract (if using), coconut sugar, and cinnamon in the bowl. Mix until well combined.
  4. Fold in any optional nuts or chocolate chips.
  5. Scoop out the dough into about eight cookie balls and flatten them slightly on the prepared baking sheet.
  6. Bake for 16-18 minutes until golden brown.
  7. Let cool for about 15 minutes on the baking sheet before transferring to a cooling rack.
