  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

  • 1/2 cup Greek yogurt
  • 2 large bananas (mashed)
  • 1 large zucchini (shredded)

Instructions

  1. Preheat oven to 180C (350F) and grease a 9 x 5-inch bread pan.
  2. In a mixing bowl, combine flour, coconut sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together the egg, Greek yogurt, and mashed bananas until smooth.
  4. Gently fold the wet ingredients into the dry ingredients until just combined. Fold in shredded zucchini and mix-ins.
  5. Pour batter into the prepared pan and bake for 45–55 minutes or until a skewer inserted comes out mostly clean.
  6. Allow cooling in the pan before slicing.
