- 1 cup pearl barley
- 2 tbsp tomato paste
- 8 cups beef or chicken broth
- 1 tsp dried thyme
- 1 tsp sea salt (or to taste)

Instructions
- In a large Dutch oven over high heat, add olive oil and beef cubes. Sear until browned and the liquids evaporate, about 10 minutes.
- Lower the heat to medium, then add onion, carrots, and garlic. Cook for an additional 5 minutes until softened.
- Stir in tomato paste, thyme, salt, and pepper while scraping the bottom of the pot. Add barley and broth.
- Reduce heat to medium-low and simmer for approximately 1½ hours until beef is tender.
