Ingredients

• 1 packet (2¼ tsp) active dry yeast
• ¼ cup warm water (about 110°F)
• 1 cup cottage cheese (room temperature)
• 2 tbsp honey
• 2 tbsp olive oil or melted butter
• 1 large egg (room temperature)
• 1½ tsp salt
• 2½–3 cups all-purpose flour or bread flour
• Optional: 2 tbsp ground flaxseed or chia seeds for extra nutrition
• Optional: oats or sunflower seeds for topping


Instructions

Step 1: Activate the Yeast
In a small bowl, mix yeast with warm water and let it sit for 5–10 minutes until foamy.
If it doesn’t foam, the yeast may be expired or the water too hot/cold.

Step 2: Mix Wet Ingredients
In a large mixing bowl, whisk together the cottage cheese, honey, oil or butter, egg, and salt until smooth.
Add the foamy yeast mixture and stir to combine.

Step 3: Add the Flour
Gradually add flour ½ cup at a time, stirring until a soft dough forms.
If using, stir in flaxseed or chia seeds at this stage.
The dough should be slightly tacky but not sticky.

Step 4: Knead the Dough
Turn the dough out onto a lightly floured surface and knead for 8–10 minutes until smooth and elastic.
Or knead with a stand mixer and dough hook for 5–6 minutes.

Step 5: First Rise
Place the dough in a lightly greased bowl, cover with a towel or plastic wrap, and let rise in a warm place for 60–90 minutes, or until doubled in size.

Step 6: Shape and Second Rise
Punch down the dough and shape into a log.
Place in a greased 9×5-inch loaf pan.
Cover and let rise again for 30–45 minutes until the dough crowns about 1 inch over the pan edge.

Step 7: Bake the Bread
Preheat oven to 350°F (175°C).
Optional: Brush the top with olive oil and sprinkle with oats or seeds.
Bake for 30–35 minutes, or until the top is golden and the loaf sounds hollow when tapped.
Internal temperature should read around 190°F (88°C).

Step 8: Cool and Slice
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack.
Cool completely before slicing for best texture.
