For the Ice Cream Base:

  • 2 cups full-fat cottage cheese

  • ¼ cup maple syrup (or honey)

  • 8 pitted Medjool dates

  • 2 tsp vanilla extract

  • ½ tsp sea salt

For the Salted Caramel Swirl:

  • ¼ cup natural almond butter (or cashew butter)

  • 2 tbsp maple syrup

  • 2 tbsp unsweetened almond milk

  • Pinch of sea salt

Optional Toppings:

  • Mini dark chocolate chips

  • Crushed roasted almonds

  • Shaved coconut


Instructions

Step 1: Blend the Ice Cream Base

  1. Add cottage cheese, maple syrup, pitted dates, vanilla extract, and sea salt to a high-speed blender.

  2. Blend on high until completely smooth and creamy, scraping down the sides as needed.

  3. Taste and adjust sweetness if desired.

Step 2: Make the Salted Caramel Swirl

  1. In a small saucepan over low heat, combine almond butter, maple syrup, and almond milk.

  2. Stir until smooth and warmed through, about 2-3 minutes.

  3. Add a pinch of sea salt and stir again.

  4. Set aside to cool slightly.

Step 3: Combine and Freeze

  1. Pour half of the cottage cheese mixture into your freezer-safe container.

  2. Drizzle half the salted caramel swirl over the top and lightly swirl with a knife.

  3. Repeat with the remaining ice cream base and caramel swirl.

  4. Cover and freeze for at least 4 hours or until firm.

Step 4: Serve

 

  1. Let the ice cream sit at room temperature for 5-10 minutes before scooping.

  2. Scoop into bowls or cones and add your favorite toppings like chocolate chips or crushed almonds.

  3. Enjoy immediately!
