  • 4 cloves garlic (minced)
  • 3 tablespoons all-purpose flour
  • 1 (12 oz) can evaporated milk
  • 1 (32 oz) quart chicken stock
  • 4 cups shredded cooked chicken
  • Fresh thyme
  • Black pepper and salt (to taste)
  • 2 cups all-purpose flour (for dumplings)
  • 1 tablespoon baking powder (for dumplings)
  • 3/4 cup (6 oz) whole milk (for dumplings)
  • 4 tablespoons butter (melted, for dumplings)

Instructions

  1. In a heavy-bottomed pot or Dutch oven, melt butter over medium-high heat. Add onion, carrots, and celery; cook until softened (about 5 minutes). Stir in garlic and cook for another minute.
  2. Mix in flour, cooking for 1 minute. Gradually stir in evaporated milk and chicken stock until smooth; bring to a boil.
  3. Add shredded chicken, thyme, black pepper, and salt; reduce heat and let simmer uncovered.
  4. In a bowl, combine flour, baking powder, black pepper, salt, and thyme. Stir in milk and melted butter until just combined.
  5. Drop spoonfuls of dumpling dough into the simmering soup. Cover and cook on low heat for 15-20 minutes until dumplings are fluffy.
