  • 34 whole medium russet potatoes (peeled)
  • 34 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt (plus more for topping)
  • Vegetable oil for frying
  • 1 tablespoon fresh parsley (chopped, optional)

Instructions

  1. Boil the peeled potatoes in a large stockpot for 6-7 minutes until parboiled but firm. Drain and cool.
  2. Shred the cooled potatoes using a box shredder.
  3. In a bowl lined with cheesecloth, salt the shredded potatoes, let sit for 10 minutes, then press to remove excess moisture.
  4. Combine drained potatoes with flour and seasonings in a mixing bowl.
  5. Shape the mixture into small tubes about 1½ inches long and place on a baking sheet.
  6. Heat vegetable oil in a Dutch oven to 370-375°F (190-190°C).
  7. Fry the tater tots in batches for about 5 minutes until golden brown, turning frequently.
  8. Drain on paper towels and sprinkle with salt before serving warm.
