Ingredients
- 3–4 whole medium russet potatoes (peeled)
- 3–4 tablespoons all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon black pepper
- ½ teaspoon salt (plus more for topping)
- Vegetable oil for frying
- 1 tablespoon fresh parsley (chopped, optional)
Instructions
- Boil the peeled potatoes in a large stockpot for 6-7 minutes until parboiled but firm. Drain and cool.
- Shred the cooled potatoes using a box shredder.
- In a bowl lined with cheesecloth, salt the shredded potatoes, let sit for 10 minutes, then press to remove excess moisture.
- Combine drained potatoes with flour and seasonings in a mixing bowl.
- Shape the mixture into small tubes about 1½ inches long and place on a baking sheet.
- Heat vegetable oil in a Dutch oven to 370-375°F (190-190°C).
- Fry the tater tots in batches for about 5 minutes until golden brown, turning frequently.
- Drain on paper towels and sprinkle with salt before serving warm.
