Description

  • ¼ cup honey
  • 2 tablespoons molasses
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 pounds boneless, skinless chicken breasts
  • 2 teaspoons cornstarch
  • 4 ounces cream cheese (softened)
  • 4 ounces shredded Monterey Jack cheese
  • ½ cup chopped fresh cilantro
  • 18 small whole grain tortillas

Instructions

  1. In a bowl, whisk together ketchup, honey, molasses, vinegar, and spices to make the BBQ sauce.
  2. Place chicken in the slow cooker and pour BBQ sauce over it. Cook on low for 3 to 3½ hours.
  3. Shred the chicken and mix with thickened sauce, cream cheese, Monterey Jack cheese, and cilantro.
  4. Preheat oven to 400°F and prepare a baking sheet with parchment paper.
  5. Warm tortillas to prevent tearing. Fill each with about ¼ cup of the mixture and roll tightly.
  6. Place taquitos seam-side down on the baking sheet, spray with cooking spray, sprinkle salt, and bake for 12–16 minutes until golden.
