  • 1 tbsp soy sauce
  • 1 egg
  • 1 cup cornstarch
  • 23 cloves garlic
  • 4 tbsp honey
  • 4 tbsp butter
  • 1 tbsp brown sugar
  • 2 tbsp soy sauce (light or regular)
  • 1 tbsp sesame oil
  • 2½ tbsp cornstarch slurry (½ tsp cornstarch mixed with 2 tbsp water)
  • Optional: 1 tsp crushed chili for heat

Instructions

  1. Cut the chicken into bite-sized pieces and marinate with egg, soy sauce, and white pepper for flavor.
  2. Coat the marinated chicken in cornstarch for extra crispiness.
  3. Heat neutral oil in a deep frying pan to 350°F (180°C) and fry the chicken twice for optimal crunch—first until lightly golden, then again until crispy.
  4. In a separate pan, prepare the honey butter sauce by sautéing minced garlic before adding honey, butter, brown sugar, soy sauce, sesame oil, and cornstarch slurry until thickened.
  5. Toss the fried chicken pieces in the sauce until well coated before garnishing with toasted sesame seeds and chopped spring onions.
