  • 3 ripe bananas (mashed, about 1¼ cups)

  • ½ cup honey

  • 2 large eggs

  • ⅓ cup plain Greek yogurt or sour cream

  • ¼ cup neutral oil (such as canola or avocado oil)

  • 1 tbsp pure vanilla extract

  • 1½ cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp salt

  • ½ tsp ground cinnamon (optional for warmth)

  • ½ cup chopped walnuts or chocolate chips (optional)


Instructions

Step 1: Prep the Oven & Pan

  1. Preheat oven to 350°F (175°C).

  2. Grease or line a 9×5-inch loaf pan with parchment paper.

Step 2: Mix Wet Ingredients
3. In a large bowl, mash bananas until smooth.
4. Whisk in honey, eggs, yogurt, oil, and vanilla extract until fully combined.

Step 3: Add Dry Ingredients
5. Sprinkle flour, baking soda, salt, and cinnamon (if using) over the wet mixture.
6. Stir gently with a spatula until just combined—do not overmix.
7. Fold in chopped nuts or chocolate chips if using.

Step 4: Bake
8. Pour batter into prepared loaf pan and smooth the top.
9. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
10. Cover loosely with foil during the last 10–15 minutes if the top is browning too quickly.

Step 5: Cool & Slice
11. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use Overripe Bananas – The browner the better for sweetness and flavor.
