Ingredients
-
3 ripe bananas (mashed, about 1¼ cups)
-
½ cup honey
-
2 large eggs
-
⅓ cup plain Greek yogurt or sour cream
-
¼ cup neutral oil (such as canola or avocado oil)
-
1 tbsp pure vanilla extract
-
1½ cups all-purpose flour
-
1 tsp baking soda
-
½ tsp salt
-
½ tsp ground cinnamon (optional for warmth)
-
½ cup chopped walnuts or chocolate chips (optional)
Instructions
Step 1: Prep the Oven & Pan
-
Preheat oven to 350°F (175°C).
-
Grease or line a 9×5-inch loaf pan with parchment paper.
Step 2: Mix Wet Ingredients
3. In a large bowl, mash bananas until smooth.
4. Whisk in honey, eggs, yogurt, oil, and vanilla extract until fully combined.
Step 3: Add Dry Ingredients
5. Sprinkle flour, baking soda, salt, and cinnamon (if using) over the wet mixture.
6. Stir gently with a spatula until just combined—do not overmix.
7. Fold in chopped nuts or chocolate chips if using.
Step 4: Bake
8. Pour batter into prepared loaf pan and smooth the top.
9. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
10. Cover loosely with foil during the last 10–15 minutes if the top is browning too quickly.
Step 5: Cool & Slice
11. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
12. Slice and serve warm or at room temperature.
Notes
Use Overripe Bananas – The browner the better for sweetness and flavor.
Don’t Overmix – Stir just until ingredients are combined to keep it tender.
Add a Banana on Top – Slice a banana lengthwise and press lightly into the batter before baking for a beautiful finish.
Cool Before Slicing – It cuts best when fully cooled.
Make Muffins – Divide into muffin tins and bake for 18–22 minutes.
