1 ½ cups sweet corn kernels (fresh, canned, or frozen)
2 tbsp unsalted butter (plus extra for topping if desired)
1 tbsp olive oil
2 garlic cloves, minced
½ small onion, finely chopped
½ tsp salt (adjust to taste)
½ tsp ground black pepper
1 tsp soy sauce (adds savory depth)
¼ tsp paprika (optional, for color and a hint of spice)
For Garnish (Optional):
2 tbsp chopped fresh parsley or chives
Grated cheese (like cheddar or parmesan)
Lemon wedges (for a zesty touch)
Instructions
Step 1: Sauté the Aromatics
Heat olive oil and 1 tbsp butter in a large skillet over medium heat.
Add chopped onion and cook for 2-3 minutes until translucent.
Stir in minced garlic and cook for another 30 seconds until fragrant.
Step 2: Cook the Corn
Add corn kernels to the skillet.
Sauté for 4-5 minutes, allowing the corn to become slightly golden and tender.
Season with salt, black pepper, and paprika (if using).
Step 3: Combine with Rice
Reduce the heat to low and add the cooked rice to the skillet.
Break up any clumps and mix well with the corn mixture.
