  • 3 lbs boneless skinless chicken thighs
  • 1 cup pineapple juice
  • 2 tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp onion powder
  • 1 ½ tbsp Korean chili paste
  • ¼ cup brown sugar
  • 1 tbsp ginger paste or ground ginger
  • 2 tbsp minced garlic
  • 1 ½ tbsp sesame oil
  • ⅓ cup soy sauce
  • ⅓ cup ketchup
  • ⅓ cup rice vinegar

Instructions

  1. In a large mixing bowl, combine all marinade ingredients except the chicken. Reserve half a cup for basting.
  2. Add chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for 24-48 hours.
  3. Preheat your grill to medium-high heat (400-450°F). Brush grates with olive oil.
  4. Remove chicken from marinade and discard excess marinade. Grill thighs for 4-6 minutes on each side until nearly cooked through.
  5. Baste with reserved marinade while grilling for added flavor.
  6. Continue grilling until chicken reaches an internal temperature of 165°F (75°C). Let rest before serving.
