  • 4 Tbsp butter
  • 1 cup diced onion
  • 1 cup diced celery
  • 1 ½ cups chicken broth
  • 1 cup uncooked parboiled rice
  • 8 oz sliced mushrooms
  • 1 tsp garlic powder
  • 1 tsp Tabasco sauce
  • 1 tsp Cajun seasoning (plus more to taste)
  • 1 green bell pepper, diced
  • 4 oz cream cheese
  • ¾ cup shredded cheddar or Monterey Jack cheese
  • 1 lb cooked medium shrimp

Instructions

  1. Set your Instant Pot to sauté mode. Melt the butter and add the onions and celery. Sauté until softened.
  2. Pour in the chicken broth, scraping the pot bottom to prevent sticking. Turn off the Instant Pot.
  3. Layer uncooked rice, mushrooms, garlic powder, Tabasco sauce, Cajun seasoning, bell pepper, and cream cheese without stirring.
  4. Secure the lid and set to manual/pressure cook for 5 minutes. Allow natural release for 5-10 minutes before venting.
  5. Stir in shrimp and shredded cheese until well combined. Adjust seasoning if needed.
